There are several OPC UA Stack Profiles one can adopt for his OPC UA server.
Activating all of them would come with maintenance costs and more potential for security vulnerabilities.
Therefore I aim to provide only the most adopted stack profile(s).
Which stack profile is most commonly adopted by consumers? Are there any best practices?

Your decision one what profiles to support should be based on what your server needs to do to support the clients that your server is likely to have. i.e. you do not need to support alarms if your system does not have alarms.
At a minimum you should support the "Standard 2017 UA Server Profile".
