I am looking for an OPC UA Server that supports thousands of items for testing purposes.

Any idea where I can find it?

Any commercial SDK vendor should have a free sample server that can handle that many items but you may have to ask their support for changing the configuration.

You can also modify the .NET Reference Server to support additional variables.
